Rejoice, Boulderites: There’s a new bakery in town and it’s serving up mouthwatering Scandinavian shortbreads.
Süti & Co is now open at 2031 16th Street and, already, it’s shaping up to be the coziest new hangout in town. Located in a preserved 1890s building right off Pearl Street, the café is the brainchild of owner and chef Andrea Uzarowski, who drew inspiration from similar bakeries in her hometown of Copenhagen, Denmark. The result is a calm, quiet, welcoming space where friends and family can gather to catch up over loose-leaf tea and coffee.
Uzarowski specializes in “süti,” a Danish-style shortbread made with locally milled flour from Moxie Bread Co. and lots of delicious Danish butter. These sweet treats are part of Uzarowski’s heritage and she’s excited to share them with Coloradans, too.
You may recognize Uzarowski, as she already owns and operates the popular Fresh Food Further catering company in Boulder.

“These are recipes that have been passed down from generation to generation in Denmark,” she says. “I hold them dear to my heart, even as the paper my great-grandmother wrote them on has turned yellow with time and is specked with stains from accidental ingredient spills over the years. The memories I have using these recipes are some of the purest and most joy-filled moments of my childhood.”
At the café, Uzarowski is serving up five signature shortbreads that are named in honor of her family and friends. The tasty “Magdalena,” for instance, is topped with walnuts and filled with fig jam, a flavor combination that Uzarowski’s beloved grandmother loves. Her daughter inspired the “Lilly” cookie, which is filled with chocolate ganache and dipped in chocolate and delicate rose petals.
Also on the menu are the “Oliver,” which is a gluten-free, dairy-free, vegan shortbread chocolate chip cookie, and the “George,” which is a vanilla bean shortbread speckled with housemade pieces of toffee. The “Anna” rounds out the list, with lemon zest shortbread filled with raspberry jam.
Süti & Co will also offer a rotating selection of seasonal cookie flavors. Right now, the seasonal lineup includes chai spice and matcha cookies, for instance.
Enjoy a crumbly cookie with coffee from Boulder’s Boxcar Coffee Roasters, as well as loose-leaf selections from Rosebud’s Apothecary in Lakewood. Sip an espresso, Americano, macchiato, cappuccino or one of several latte flavors while taking a pause during a busy workweek or on a slow weekend afternoon.
The café also doubles as a shop that’s brimming with Scandinavian home goods, hand-curated by Uzarowski herself, so you can bring a little of the “hygge” lifestyle into your own home.
Süti & Co is open Tuesdays through Fridays from 9 a.m. to 5 p.m. and Saturdays and Sundays from 10 a.m. to 6 p.m.
