New Bagels in Boulder County

Prepare yourself for a carb overload: Boulder County has some new bagel developments in the works.

The popular Denver bagel shop Rosenberg’s Bagels & Delicatessen is bringing its authentic New York-style bagels to Boulder, with a new Jewish deli on University Hill.

Rosenberg’s parent company, Bridge & Tunnel Restaurant Group, is helmed by Joshua Pollack, who studied business at the University of Colorado Boulder in the early 2000s. Pollack, who is originally from New Jersey, fell in love with the Centennial State and decided to make it his home.

“I’ve always loved the environment and energy of Boulder,” says Pollack. “Once I realized that Colorado was the place where I wanted to raise my family, I knew I would have to bring the kinds of mom-and-pop restaurant staples that I’d grown up with out here with me. Living in Boulder is what inspired the whole BTRG concept and I’m beyond excited to see it come full circle with this new location.”

He opened the first Rosenberg’s nearly seven years ago. Today, the bagel shop and deli has locations in Five Points and Stanley Marketplace, with an additional Rosenberg’s Kosher outpost in Denver.

The new Boulder location, set to open sometime this spring, will incorporate some of the restaurant group’s other concepts, including a full bar, Lou’s Italian Specialties and Famous Original J’s Pizza. From 6 a.m. to 3 p.m., the restaurant will serve bagels and other Jewish deli foods. Then, from 3 p.m. to close, it will transition to “Rosenberg’s After Dark” and offer pizza (whole pies and slices) and Italian fare.

The morning and mid-day menu will feature Rosenberg’s award-winning bagels, made with water that mimics the mineral content of the water found in New York City (this is how the bagels get their chewy texture!). For toppings, there’s house-cured and smoked fish, deli meats, vegetables and schmear. The menu will also feature dishes like potato knish and matzo ball soup, as well as freshly baked challah and rugelach. Rosenberg’s also plans to offer catering at the new Boulder location.

Moe’s Broadway Bagel Comes to Longmont

Meanwhile, in Longmont, Moe’s Broadway Bagel is opening a new location on Main Street.

The popular bagel shop already has four locations in Boulder, plus one in Louisville and one in Denver. The Longmont location will take over a formerly vacant building at 225 Main Street and is slated to open in July.

John and Patty Sherman first opened Moe’s Broadway Bagel in Boulder 29 years ago. After meeting in Boulder, they traveled to the East Coast to learn the art of bagel-making, then founded their own small businesses; they’re both still heavily involved in the business, along with other members of the family.

“Even today, John is awake by 3 a.m. to make sure the bagels are hot and fresh and it is a rare day when Patty isn’t at her stores to greet the regulars,” according to the Moe’s website.

They’d been looking to open a Longmont outpost for a while, and when the 1960s-era building became available, they jumped at the opportunity.

The Longmont menu will feature 24 different styles of bagels, 15 types of cream cheese, breakfast and lunch sandwiches, wraps, coffee and juice.
