C Burger Proves That Great Burgers Can Be Good for the Planet, Too

Nothing beats a smashburger when you’re craving a hearty, meaty meal. 

 

Now, there’s a new place in town to get one: C Burger.

 

The team at Half Eaten Cookie Hospitality, which also owns Oak at Fourteenth and the Corrida, has opened a new, full-service location of C Burger on Pearl Street.

C Burger initially launched in June 2023 at the Sanitas Brewing taproom in Englewood. Located at 921 Pearl Street, C Burger’s new home has a full bar featuring craft cocktails, wine and beer. The new location also features an expanded menu that goes beyond smashburgers to include pasture-raised chicken, fresh salads and house-made soft-serve ice cream.

 

The space is also bigger overall, with seating for up to 70 guests indoors, plus more tables on the outdoor patio.

Bryan Dayton, the founder of Half Eaten Cookie Hospitality, has long prioritized serving eco-conscious beef at Corrida. But C Burger proves that high-quality, responsibly-sourced meat doesn’t have to be limited to fine dining. 

 

“At Corrida, we’ve spent years advocating that regenerative beef isn’t just an ideal—it’s a necessity for the future,” says Dayton. “C Burger is where we take that idea from steakhouse indulgence to everyday craving.”

C Burger’s patties are made with beef from Dayton’s regenerative beef label, Colorado Cattle Company. He’s partnering with regenerative ranches, which are committed to improving soil health, increasing water retention and increasing biodiversity by letting cattle graze naturally. These methods help restore grasslands while also reducing ranchers’ reliance on synthetic fertilizers. 

 

Overall, regenerative ranching leads to healthier land, lower emissions and more resilient ecosystems. And since Colorado Cattle Company sources from local ranches, it’s also shortening the supply chain, supporting local economics and providing diners with fresher, more traceable meat.

With C Burger, Dayton hopes to change the way we eat burgers for the better.

 

“The world is changing, and so is the way we eat. We’re not here to preach about sustainability—we’re here to serve up great burgers that just happen to be good for the planet, too.”

 

C Burger’s executive chef is Samuel McCandless, a partner in the venture who has also worked in illustrious Boulder kitchens like Arcana (now closed), Frasca Food & Wine and Corrida. 

 

He’s the brains behind C Burger’s menu, which includes several, simply named classics: 

-A Burger, made with American cheese, pickles, onion, ketchup and mustard

-B Burger, made with American cheese, tomato, lettuce and C Burger sauce (a mustard-forward version of Big Mac sauce)

-C Burger, a signature option featuring smoked bacon, crispy jalapeños and green chili sauce

-B3 Burger, made with American cheese, smoked bacon, crispy onions and BBQ mayo

-S2 Burger, featuring Swiss American cheese, and tallow-mushroom sauce

All burgers can be made with a single or double patty, Portobello mushroom or a veggie patty for a customizable bite. In addition, you can feel good ordering the C Burger over and over again, because 1 percent of sales will be donated to Zero Foodprint, a non-profit that funds regenerative farming projects. 

 

Burgers aside, you can also order C Bites (pasture-raised chicken nuggets with a choice of dipping sauce) and the Fried C, a fried chicken sandwich with smoked bacon, shredded lettuce, Swiss American cheese and chipotle aioli. Sides include onion rings, golden potato fries, loaded cheese fries and herbed fries, which are all fried in beef tallow. 

 

C Burger also has a selection of salads, including the C Salad (made with romaine, cucumber, chickpeas, salami, mozzarella and red wine vinaigrette) and the C Caesar (featuring kale, breadcrumbs and parmesan cheese). Another great option is the Grilled C Salad featuring romaine, red cabbage, tomatoes, cucumbers, red onions, carrots, croutons and a choice of dressing (ranch, blue cheese, red wine vinaigrette or agave-lemon vinaigrette). 

 

And, for dessert, chocolate or vanilla soft-serve.

As you munch, sip on drinks like the C Margarita (served spicy or classic) or the C Daly (a spiked Arnold Palmer). For a retro, refreshing sip, try the Frozen C, a blend of spiced rum and Dr. Pepper. For the craft beer drinkers in your crew, C Burger offers tried-and-true classics like the Prost Pilsner and the Great Divide Hazy IPA. Wines, soft drinks and non-alcoholic craft beers are also available.

 

C Burger’s interior design features retro Americana elements and contemporary touches. You’ll find warm wood tones, varied subway tiles and a color palette inspired by Colorado’s natural landscape—earthy greens, rich browns and golden mustards.

 

The bar area has flat-screen TVs, and there’s a custom mural at the entrance.

 

C Burger is open Sunday through Wednesday from 11 a.m. to 9 p.m. and until 10 p.m. on Thursdays, Fridays and Saturdays.
